Mondiola presents U shaped closed with a bay leaf to the center in the point of junction of the folded ends.
The paste of Mondiola is of soft consistency with average grain and deep red color. the scent is spicy. For productione we use the front parts of the pig, the richest blood that give it its characteristic red color pronounced. The lean parts come mainly from the cup and to a lesser extent from the shoulder, while the fat from bacon and cheek. the dough, made from a medium ground meat is mixed with salt, pepper, spices and cloves.
